Cold pressed from green and turning colour olives, varieties include the rare Bouqettier, Mission and Verdale. This organic oil is unfiltered, unrefined and lovingly hand-bottled in small batches. Heritage trees rely solely on natural rainfall and once picked, olives are cold pressed immediately producing a low yield of ultra-premium organic olive oil – beautifully concentrated in flavour. On average our trees produce just one precious litre of organic olive oil each, so a 15L cask contains the entire annual production of 15 trees!

History of Grampians Olive Co.
Grampians Olive Co. is home to the historic ‘Toscana’ Olive Plantation. Established in 1943 by immigrant farmer Jacob Friedman under the Grampian Olive Plantations Co., it was one of the first and largest groves in Australia at the time. The grove was renamed "Toscana" in the early 1960s - honouring Italian involvement in the grove’s establishment and similarity in climate and scenery to the Toscana (Tuscany) region in Italy. Over the past 70 years the grove has established a reputation for producing Australia's best organic extra virgin olive oil and is the choice of some of Australia's top chefs and restaurants. They are proud that their efforts produce consistently award winning products.
Today they are still 100% Australian family owned, run by two generations of the Mathews; Andrew and Susan and son Greg. In 2015 they wanted to better reflect the beauty of the unique Grampians location in which products are grown and produced. So they are now known as "Grampians Olive Co. - the home of Toscana". The name is a throwback to the grove’s original name and combines our two brands (Grampians Olive Estate & Toscana), reconnects with roots and better communicates the origin of products. They are passionate custodians of the long and proud history of premium certified organic olive oil production in the beautiful Grampians in North Western Victoria.
Organic farming
Organic farming, a unique mix of rare varieties, the right climate and the age of olive trees are what create the unique flavour ofoil. The traditional low density dry land planting ensures quality whist the number of trees across an expansive area enables them to offer a consistent supply. Their grove produces a relatively small amount (for the land area) of high quality premium extra virgin olive oil and they are happy with that - their focus is on quality over quantity.
Olives are grown and processed the way nature intended - completely free of pesticides, herbicides, synthetic fertlilisers and chemicals that could damage your health and our ecosystem. The entire grove is certified organic by NASAA and organic farming practices have been employed since the beginning when trees were hand planted in the virgin soil. They are always working to naturally improve the soil rather than deplete it and ensure our farming and processing practices are sustainable. For example the pomace (crushed stones and skins) obtained from pressing olives is composted and put back into the soil. Their trees are carefully hand pruned, the prunings are mulched and put around the trees to improve the soil.
Sheep are seasonally grazed among the trees as part of their organic management plan, which helps keep the grass down as well as providing natural fertiliser for our trees. Being adjacent to the pristine Grampians National Park guarantees the integrity of their organic status, and also means they have abundant native wildlife sharing their grove including kangaroos, emus, echidnas and a variety of birds which help to keep everything in balance and control pest insects.
Their low-touch approach to oil production – cold pressed on farm within hours of harvest, unfiltered, unrefined – produces unique oil with beautifully balanced flavours. Single estate produced, their oil is lovingly hand-bottled in small batches to guarantee freshness. To ensure our high quality standards are met they do the entire production process themselves – from tree to bottle.
